Flat on all surfaces. The cutting of the stone is excellent. It came shrink wrapped, and safely packaged. It arrived smooth on all sides of the stone. Some Arkansas stone manufactures and reviewers say their stone arrives rough and will eventually smooth in after a break in period. It is not the case with this stone. Approx. between 600 to 1000grit. It feels as smooth as my Japanese whetstone which is 1000 grit. Stone cuts much faster my Japanese whet stone. Also, I think you need to have extra patience and careful control while sharpening, because the stone is very hard and can easily dull an edge if the angle is not held correctly. I have used it for about an hour and it is still smooth to the touch. Honing oil sits on top of the stone and does not get absorbed by the stone. Therefore, little oil is needed, but extra oil will not hurt. I can not see myself wearing out this stone in my lifetime. Appreciate the customer service provided by Gesswein.
